Eggs have taken a bad rap in the United States for decades now, although the Federal Government is changing it’s collective mind once again.  But, if you can cook eggs, you will never go hungry. They are  readily available, affordable, and a nearly nutritionally perfect food.

Eggs are one of the easiest foods to cook, once you have mastered a few basic techniques. You can whip up breakfast, lunch or dinner or a snack any time you like. It is essential to have a non-stick pan or a very well seasoned cast iron pan, to cook eggs successfully. Eggs can stick like glue to untreated stainless steel.

Here are some of our recipes to get you started:

Classic Deviled eggs
Omelettes
Breakfast strata
Quiche (coming soon!)

Be sure to check back often as we add recipes, and don’t be afraid to eggs-periment!

And for those of you who like a visual, here are some videos:

And just because he’s so stinkin’ cute, here’s Mr. Oliver cooking scrambled eggs three different ways. I’m not sure I have the patience for the French style eggs over the water bath, but if you try it, tell us if we’re missing something!

And here is master chef, Jacques Pepin at work on eggs, if you’re feeling more adventuresome. He makes it look easy!
